No Added Fat Cornbread
No Added Fat Cornbread is an moderately easy dinner. Made with 2 c. corn meal (self-rising), 1 c. skim milk, 1 tbsp. lemon juice (optional), 2 egg whites and 1 tbsp. oil (optional), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Preheat oven to 400°.
If you want the cornbread to be like buttermilk cornbread, add the lemon juice to the skim milk and let it set for about 3 minutes.
Add all ingredients and stir well. Spray nonstick baking pan with baking spray and bake at 400° until top is brown.
If you do not mind extra fat, I heat 1 tablespoon oil in a seasoned iron skillet in the oven and when it is hot, take it out and add mix.
This gives it a kinda-sorta crusty bottom.
