Nanaimo Cookies
Nanaimo Cookies is an moderately easy dinner. Made with 1 c. butter, divided, 1/4 c. granulated sugar, 1 sq. baking chocolate, 1 tsp. vanilla and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Put 1/2 cup butter, sugar, unsweetened chocolate, and vanilla in top of double boiler until blended.
Add egg and cook 5 minutes, stirring.
Add crumbs, nuts and coconut.
Press firmly into buttered 9x9x2- inch pan.
Cool and chill 15 minutes.
Cream 1/2 cup butter, beat in pudding mix and milk.
Add confectionary sugar gradually and beat until smooth.
Spread over first layer. Chill 15 minutes.
Melt chocolate in 1 tablespoon butter over low heat. Spread over layer and chill till firm.
Cut into 1 inch squares.
Keep in refrigerator.
May be frozen.
Makes 81 pieces.
