N. C. Coastal Seafood Casserole is an impressive dinner. Made with 1 (8 oz.) pkg. cream cheese, 1 stick butter or margarine, 1 lb. shrimp, shelled and deveined, 1 large onion, chopped and 1 green pepper, chopped, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Melt the cream cheese and 1 stick butter or margarine using a double boiler or microwave.
Saute shrimp, onion, pepper and celery in 2 tablespoons butter. Add to the first mixture.
Add soup, mushrooms, seasonings, crab meat and rice.
Mix well and place in a 2-quart casserole.
Top with mixture of cheese and cracker crumbs.
Bake at 350Β° for 25 to 30 minutes until bubbly. Cool slightly and serve.
