Muskmelon Pie
Muskmelon Pie is an moderately easy dinner. Made with 2 c. muskmelon (yellow), stewed, 1 tbsp. butter, 2 tbsp. cornstarch, 1/4 tsp. nutmeg and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook and mash the melon. Add 1/2 cup sugar, cornstarch, nutmeg, butter and well beaten egg yolks.
Cook over low heat until thick.
Add filling to baked 8-inch pie crust.
Beat egg whites and cream of tartar until frothy.
Continue beating until stiff and glossy.
Cover filling with meringue and bake 8 to 10 minutes in 400Β° oven.
