Mud Hen
Mud Hen is an moderately easy dinner. Made with 1 c. oleo, 1 c. sugar, 2 eggs, 1 tbsp. vanilla and 1 1/2 c. self-rising flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream sugar and oleo.
Add 1 whole egg and 1 yolk.
Gradually blend in flour.
Add vanilla.
Pour into 9 x 13-inch pan.
Mix pecans, egg white (do not beat) and brown sugar.
Pour over top of first mixture.
Bake at 300Β° for 20 minutes.
