Mom'S Mexican Wedding Cakes is an moderately easy dinner. Made with 1/2 lb. butter, 6 heaping tbsp. confectioners sugar, 2 c. flour, sifted, 1/4 tsp. salt and 2/3 to 1 c. chopped nuts, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cream butter and sugar; add flour, salt, nuts and vanilla. Form into 1-inch balls.
Bake on an ungreased baking sheet in a 325Β° oven until a very light brown (15 to 20 minutes).
While still warm, roll in confectioners sugar.
Let cool and roll again in confectioners sugar.
These are very crisp and short.
Store in a jar with a loose cover.
