Molded Chicken Loaf
Molded Chicken Loaf is an moderately easy dinner. Made with 2 envelopes gelatin, 2 1/2 c. chicken broth, 4 c. diced chicken, 2 tsp. lemon juice and 2 tbsp. chopped parsley, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Soften gelatin in 1/2 cup broth.
Melt remaining broth; add gelatin and stir until gelatin dissolves.
Add chicken, salt and pepper.
Cook until begins to thicken.
Fold in remaining ingredients.
Pour into 2-quart mold or loaf pan.
Chill several hours; slice, serve on lettuce and top with tomato slices and green pepper rings.
