Molded Beet Salad
Molded Beet Salad is an moderately easy salad you can prepare in about 1 hour 14 minutes. Made with beets, chopped fine, . lemon flavored gelatin, . horseradish, c. sugar and c. wine vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Drain beets; save juice.
Measure juice and add enough water to make 1 1/2 cups liquid.
Bring to a boil, then remove from heat.
Add gelatin, sugar, vinegar and horseradish.
Stir until gelatin and sugar are dissolved.
Add beets.
Pour into mold or 8-inch square pan and refrigerate until firm.
Serve over lettuce to which mayonnaise and red wine vinegar has been added to taste.
