Molasses Cupcakes
Molasses Cupcakes is an moderately easy dinner. Made with 1 c. sugar, 2 c. flour, 1/2 tsp. salt, 1/2 c. shortening and 1 egg, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix the first 4 ingredients with pastry blender; set aside 1/4 to 1/3 cup crumbs for topping.
Mix egg with molasses.
Add baking soda to sour milk.
Add milk to molasses mixture, then add to dry ingredients.
Pour into cupcake tin with cupcake liners.
Sprinkle with reserved crumbs.
Bake at 375Β° for 20 to 25 minutes.
A double batch will make 7 small loaves.
May need to bake loaves longer.
