Mock Mack Eplen Pink Cookies
Mock Mack Eplen Pink Cookies is an moderately easy dinner. Made with 1/2 c. crisco, 1 stick butter, 1 1/2 tsp. vanilla, 1 tsp. soda and 1 c. pecans, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream Crisco and butter.
Add sugar and beat well.
Stir in egg.
Combine flour, soda and salt and add to creamed mixture. The dough will be stiff.
Add milk, vanilla and pecans.
Shape dough into balls and roll in powdered sugar.
Place on a lightly greased cookie sheet.
Bake at 350Β° for 10 minutes.
While cookies are hot from the oven, press down in center of each cookie with the back of a teaspoon.
Fill the center with pink frosting made with powdered sugar, vanilla and water while still hot.
Makes 4 dozen cookies.
