Mock Enchilada Casserole
Mock Enchilada Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1/2 c. chopped onion, 1/3 c. chopped bell pepper, 1 tsp. salt (optional) and 1 can chili con carne (without beans), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Brown meat, onion and bell pepper.
Drain.
Add chili and soup (do not add water).
Place a layer of corn chips in a greased 1 1/2-quart baking dish.
Add a layer of meat and sauce and then a layer of cheese.
Repeat until gone.
Set aside for 20 minutes before baking.
Bake at 350Β° for 20 minutes.
