Mock Crab Cakes

Drain zucchini well, pressing between layers of paper towels.
Combine zucchini and next five ingredients in a large bowl.
Divide in patties (mixture will be soft).
Pour oil to depth of 1/2-inch in heavy skillet.
Fry in hot oil over medium heat for 2 minutes each side.
Drain on paper towels.
