Mixed Rice Salad
Mixed Rice Salad is an moderately easy dinner. Made with 2 1/4 c. water, 1 (6 oz.) pkg. long grain and wild rice mix (uncle ben's), 1/2 c. each: mayo and plain yogurt, 1/2 c. sliced green onions and 1/4 c. chopped fresh parsley or 1 tsp. dried, this recipe delivers authentic, satisfying flavors. In 2 to 3-quart pan, bring water to boil.
Add rice and return to boil.
(Do not use seasoning packet.)
Cover pan and cook on low heat until water is absorbed and rice is tender (about 30 minutes).
Uncover and let rice cool to room temperature, about 30 minutes.
