Wash beans and place in a large kettle.

Cover with water 2 inches above bean line.

Add salt and soak overnight; drain in the morning.

Add 2 quarts of water (8 cups) and ham hocks.

Bring to a boil.

Add 1 onion, tomatoes, chili powder, lemon juice and pepper.

Simmer for 3 hours.

Remove ham from hocks before serving.

Makes 4 quarts.
