"Mintz" Cheesecake
"Mintz" Cheesecake is an moderately easy dinner. Made with 1 1/2 c. chocolate wafer crumbs, 1/4 c. margarine or butter, melted, 8 oz. cream cheese, 14 oz. sweetened condensed milk and 1 c. crushed hard peppermint candy, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine first 3 ingredients.
Firmly press onto bottom and 1 inch up sides of a 9-inch spring-form pan.
Chill.
Beat cream cheese at high speed with electric mixer until fluffy.
Add condensed milk, peppermint candy and food coloring.
Beat well. Fold in whipped cream.
Pour into prepared pan.
Cover and freeze until firm.
Garnish if desired.
Yield
One nine-inch cheesecake.
