Minted Sundae Soda
Minted Sundae Soda is an easy dinner. Made with 1 (10 oz.) jar (about 1 c.) mint apple jelly, 1/2 c. water, lime sherbet, vanilla ice cream and bottled lemon-lime carbonated beverage, chilled, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine jelly and water in saucepan.
Cook and stir over low heat until jelly dissolves.
Cool, then chill.
Into tall chilled glasses, pour about 3 tablespoons mint jelly syrup.
Add spoonful of sherbet or ice cream; stir until melted.
Add a scoop of vanilla ice cream, then scoop of lime sherbet.
Finish with another scoop of vanilla.
Fill glass with lemon-lime carbonated beverage; pour carefully down side of glass to save sparkle (bubbles).
Garnish with lime slices and mint sprig.
(May use 2 teaspoons crème de menthe syrup in each glass in place of mint jelly syrup.
