Minnesota Cucumbers
Minnesota Cucumbers is an moderately easy dinner. Made with 6 heaping c. cucumbers, sliced, 1 or 2 medium onions, sliced, 1 or 2 green peppers, chopped, 1 heaping tbsp. salt and 1 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place cucumbers, onions and peppers in large bowl and sprinkle salt over all.
Cover and let stand in refrigerator for approximately 3 hours.
Stir occasionally.
Drain completely.
Add sugar and vinegar.
Stir and let stand at room temperature until dissolved.
Store in refrigerator.
Keeps indefinitely.
