Miniature Pecan Pies
Miniature Pecan Pies is an moderately easy dinner. Made with 8 oz. cream cheese, softened, 1 c. margarine, softened, 2 c. plus 2 tbsp. flour, dash of salt and 3 eggs, beaten, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine cream cheese and margarine in a large bowl.
Cut in flour and salt with pastry blender until blended.
Shape into 1-inch balls.
Place into miniature muffin cups, pressing to cover bottom and side.
Chill for 1 hour. Beat eggs in bowl until foamy. Add cooled, melted margarine and vanilla.
Mix well. Add brown sugar and pecans.
Mix well.
Spoon into prepared muffin cups, filling 3/4 full.
Bake at 325Β° for 25 minutes or until filling is set. Cool and remove from pans. Yields 48 servings.
