Mini Cheesecakes
Mini Cheesecakes is an moderately easy dinner. Made with 2 (8 oz.) pkg. cream cheese, 2 eggs, 3/4 c. sugar, 1 tsp. vanilla and 24 keebler vanilla wafers, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix cheese, eggs, sugar and vanilla until creamy.
Put 24 wafers flat side down in paper-lined muffin tins.
Put 1 tablespoon of cream cheese mixture over each.
Bake at 375Β° for about 15 minutes.
They will not brown; do not overbake.
Put 1 teaspoon of pie filling on each and refrigerate.
