Mini Cheesecakes
Mini Cheesecakes is an moderately easy dinner. Made with 1 pkg. vanilla wafers, 2 (8 oz.) pkg. cream cheese, 2 eggs, 1/2 c. sugar and 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Line muffin tin with foil liners.
Place 1 vanilla wafer in each liner.
Mix cream cheese, vanilla and sugar until well blended.
Add eggs.
Mix well.
Pour over wafers, filling 3/4 full. Bake 20 minutes at 350Β°.
Remove when cool.
Chill.
Top with fruit topping, preserves, nuts or chocolate (be creative).
