Mini Cheesecakes
Mini Cheesecakes is an moderately easy dessert you can prepare in about 1 hour 34 minutes. Made with c. graham cracker crumbs, c. sugar, c. butter, melted, (8 oz.) pkg. cream cheese, softened and (14 oz.) can eagle brand milk (not evaporated milk), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Preheat oven to 300Β°.
Combine crumbs, sugar and butter. Press equal portions onto bottoms of 24 lightly greased* or paper lined muffin cups.
In large mixer bowl, beat cheese until fluffy. Gradually beat in Eagle Brand milk until smooth.
Add eggs and vanilla; mix well.
Spoon equal amounts of mixture (about 3 tablespoons) into prepared cups.
Bake 20 minutes or until cakes spring back when lightly touched.
Cool.
Chill.
Garnish as desired.
Makes about 2 dozen.
