Mini Cheesecake
Mini Cheesecake is an easy dinner. Made with 12 vanilla wafers, 2 (8 oz) cream cheese, 1/2 cups sugar, 1 tsp. vanilla and 2 eggs, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Line muffin tin with foil liners.
Place 1 wafer in each liner.
Mix cream cheese, vanilla, and sugar on medium speed until well blended: add eggs.
Mix well.
Pour over wafers, filling 3/4 full.
Bake for 25 minutes ant 325 degrees.
Remove from pan when cool.
Chill.
Top with fruit preserves or cherry pie filling.
