Million Dollar Potatoes
Million Dollar Potatoes is an moderately easy dinner. Made with 6 medium baking potatoes, vegetable oil, 1/2 c. butter or margarine, softened, 2 c. (8 oz.) cheddar cheese, divided and 1 (8 oz.) carton sour cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Wash potatoes and rub with oil.
Bake at 400° for 1 hour or until done.
Cut potatoes in half lengthwise.
Carefully scoop out pulp, leaving shells intact.
Mash pulp.
Combine mashed pulp, 1 1/2 cups cheese, sour cream, milk, parsley, salt and pepper. Stuff shells with potato mixture and sprinkle with remaining cheese.
Bake at 350° for 20 minutes.
