Mildred's Cornbread
Mildred'S Cornbread is an moderately easy dinner. Made with 1 c. yellow cornmeal, 1 c. sweet milk, 1/2 tsp. soda, 3/4 tsp. salt and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix together and set aside; brown 1 1/2 pounds ground meat and drain.
Chop 1 large onion and 1 jalapeño pepper.
Grate 1/2 pound cheese or use sliced cheese.
Pour 1/2 batter, spread grated cheese, spread ground meat, spread onions/peppers and top with remaining batter in large skillet.
Bake at 350° to 375° for 45 minutes.
