Mid-West Casserole
Mid-West Casserole is an impressive dinner. Made with 1/3 c. margarine, 1 c. shredded cabbage, 1 c. grated carrot, 1 c. grated raw potato and 1/4 c. finely chopped celery, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Melt margarine in saucepan.
Add cabbage, potato, celery, carrot, onion and parsley.
Cook over low heat 5 minutes.
In bowl, combine egg yolks and milk; blend in bread cubes, salt and pepper.
Gradually blend in vegetable mixture.
Fold in stiffly beaten egg whites.
Pour into well-greased 1 1/2-quart casserole. Bake at 350Β° for 45 minutes.
