Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. white corn syrup, 1/2 c. water, 2 c. sugar, 2 c. peanuts and 2 tsp. butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix and cook corn syrup, water and sugar for 6 minutes in microwave on High in uncovered dish.
Meanwhile butter cookie sheets.
Remove from oven and stir.
Add peanuts.
Return to microwave on High for 8 minutes, stirring every 2 minutes.
Add butter.
Cook another 8 to 10 minutes on High, stirring every 2 minutes.
Add baking soda and vanilla to mixture, it will bubble up.
Spread into cookie sheet.
When cold break into pieces.
