Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1/2 c. white corn syrup, 1 c. sugar, 1 tsp. water, 1 c. raw peanuts and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix corn syrup, sugar and water in mixing bowl.
Cover with paper towel and microwave 4 minutes.
Add peanuts.
Cover and cook 4 to 5 minutes until syrup and peanuts are lightly browned to a caramel brown.
Stir in remaining ingredients until light and foamy.
Spread to 1/4-inch thickness on large, well-buttered cookie sheet.
Let harden.
Break in pieces to serve.
