Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. white sugar, 1 c. salted (without skins) peanuts, 1 tsp. butter, 1 tsp. baking soda and 1/2 c. white corn syrup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Stir together in a 2-quart glass pitcher and microwave on High for 4 minutes.
Add salted peanuts.
Stir well.
Microwave on High for 4 minutes.
Add butter and vanilla; stir well.
Microwave on High 1 1/2 to 2 minutes.
Add baking soda.
Stir gently until light and foamy (quickly and carefully as it is very hot and hardens rapidly).
Pour mixture at once onto buttered cookie sheet.
Cool 1/2 to 1 hour, then break into pieces and store.
