Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. raw peanuts, 1 c. sugar, 1/2 c. corn syrup, 1/8 tsp. salt and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a 2-quart glass bowl, stir together first 4 ingredients. Microwave on High for 8 minutes, stirring well at 4 minutes.
Add vanilla and margarine.
Blend.
Microwave 1 1/2 to 2 minutes on High.
Add baking soda and quickly stir until light and foamy. Immediately pour onto a lightly buttered baking sheet.
Spread out thin.
When cool, break into pieces.
