Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. light corn syrup, 1 c. raw peanuts, 1/4 tsp. salt and 1 tbsp. vanilla, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine sugar, corn syrup, peanuts and salt in a 2 quart casserole.
Stir well.
Microwave at High 8 to 9 minutes.
Mixture will be light brown in color.
Add oleo and vanilla.
Blend thoroughly.
Microwave on High 1 to 3 minutes or until mixture reaches the hard crack stage (300Β°).
Stir in soda quickly.
Pour onto greased slab or cookie sheet.
Let cool at least 1 hour. Break into small pieces.
Store in airtight container.
