Microwave Crumb-Coated Chicken
Microwave Crumb-Coated Chicken is an easy dinner. Made with 2 eggs, 1/3 c. melted butter, 1 tsp. salt, 1 1/2 c. buttery cracker crumbs (about 50) and 1 chicken (2 1/2 to 3 1/2 lb.), cut up and skin removed, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In small bowl beat together eggs, butter and salt. In shallow dish place crumbs.
Coat chicken with crumbs.
Then coat with egg mixture and then crumbs again. In 12 x 8 x 2-inch dish arrange chicken with meatiest pieces to outer side edges of dish and cover with wax paper.
Microwave at High 18 to 22 minutes, rotating dish 1/2 turn after 10 minutes, until done.
Let stand 5 minutes before serving.
