Microwave Corn Casserole
Microwave Corn Casserole is an moderately easy dinner. Made with 1/2 c. corn muffin mix, 1/4 c. cooking oil, 2 tbsp. diced pimiento (optional), 1 (16 1/2 oz.) can cream-style corn and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine and mix together the muffin mix, oil, corn, eggs, garlic salt and pimiento.
(Omit the pimiento if your children are like mine and complain of bits of "red" in their corn.)
Pour into an ungreased, 8-inch, round microwave-safe dish.
Cover with plastic wrap.
