Mexican Rice
Mexican Rice is an easy dinner. Made with 1 to 1 1/2 c. rice, 4 to 5 c. chicken broth (fresh, canned or bouillon), salt, pepper and garlic, 1/2 c. chopped onion and 1 c. tomato juice or stewed tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
