Mexican Pie
Mexican Pie is an moderately easy dinner. Made with 2 cans pinto beans, 1 jar jalapeño salsa (hot), 8 oz. cream cheese, softened, 8 oz. sour cream and 8 oz. grated mild cheddar cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Warm beans; drain and mash.
Layer bottom of 9 x 11-inch rectangular dish with beans.
Put in refrigerator to cool.
Mix cream cheese and sour cream, then pour over beans.
Add layer of salsa, then layer mild Cheddar cheese.
Sprinkle Parmesan cheese over entire dish.
Sprinkle onions to garnish and refrigerate until ready to serve.
