Mexican Lasagna
Mexican Lasagna is an moderately easy dinner. Made with 1 pkg. soft taco shells, 1 lb. ground beef, 1 c. salsa, 1 (15 oz.) can tomato sauce and 1 pkg. taco seasoning mix, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Heat oven to 375Β°.
Brown meat and drain.
Stir in salsa, tomato sauce and taco seasoning mix.
Simmer 5 minutes.
In a separate bowl, combine cottage cheese, eggs and oregano.
Line bottom of lightly greased 13 x 9-inch baking dish with half of shells.
Top with half of meat mixture.
Spoon cottage cheese mixture over meat; then top with remaining taco shells.
Spread remaining meat on top and put the shredded and Monterey cheeses on top.
Bake 35 minutes or until bubbly.
Let stand 10 minutes.
