Mexican Fruit Cake
Mexican Fruit Cake is an moderately easy dinner. Made with 1 (20 oz.) can crushed pineapple, 2 ripe bananas, mashed, 2 c. all-purpose flour, 1 tsp. salt and 2 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix pineapple, juice and all, into soda; set aside . Sift flour, sugar and salt together.
Add pineapple mixture and bananas; stir by hand.
Add eggs and stir.
Add nuts.
Pour batter into a greased and floured 9 x 13-inch pan.
Bake at 350Β° about 30 minutes or until cake tests done.
Cool and top with Cream Cheese Frosting.
