Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 c. cornmeal (yellow), 1/3 tsp. soda, 3/4 tsp. salt, 1 c. milk and 2 beaten eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix cornmeal, soda, salt, milk, eggs, corn and bacon grease. Grease pan; cover with yellow cornmeal and brown.
Layer half of cornmeal mixture on the bottom of pan, then layer peppers, hamburger, onions and cheese.
Put remaining half of cornmeal mixture on top.
Cook at 350° for 45 to 55 minutes.
