Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 c. yellow cornmeal, 1/2 c. flour, 2 eggs, beaten, 1 c. sweet milk and 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Mix cornmeal, eggs, milk, corn, soda, salt and drippings together; set aside.
Saute hamburger and put on paper towel to drain excess grease.
Prepare onion, cheese and peppers.
Place in molds ready to use.
Grease a large skillet and heat.
Sprinkle a thin layer of corn meal in skillet.
Brown slightly and pour 1/2 batter into skillet.
Sprinkle cheese on batter, then spread hamburger over this.
Add onion and peppers.
Pour remaining batter on top.
Bake for 45 to 50 minutes in a 350° oven.
