Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 2/3 c. self-rising cornmeal, 1/2 c. self-rising flour, 1/2 c. sugar, 1/3 c. sharp cheese and 3/4 c. buttermilk, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In mixing bowl, add cornmeal, flour, sugar and cheese.
Put into blender corn, eggs, jalapeño peppers, oil and onion; chop well.
Add this to first 4 ingredients and mix well.
Add buttermilk and blend well.
Pour in muffin pans and cook in 350° oven.
Makes 24 muffins.
