Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 3 c. self-rising cornmeal, 2 tsp. baking powder, 1 tsp. salt, 1 large onion, chopped and 1 (4 oz.) can chopped green chili peppers, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix in large bowl cornmeal, baking powder and salt.
Add oil and milk and stir until well blended.
Add onion, peppers, cheese and corn.
Mix well.
Pour mixture into 9 x 13 1/2-inch glass baking dish that has been sprayed with cooking spray.
Bake at 350Β° until brown, approximately 30 minutes.
