Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 1/2 c. self-rising corn meal, 3/4 c. self-rising flour, 1 egg or 2 egg whites, 1/2 tbsp. sugar and 1/2 c. skim milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown meat and drain.
In a large skillet, add onion and simmer about 3 minutes.
Add chili powder, chopped jalapeños and cream of mushroom soup; set aside.
Then mix first six ingredients and set aside.
In baking dish or large iron skillet sprayed well with nonstick spray, put one layer cornbread mixture, then a layer of meat mixture; repeat cornbread and meat mixture.
Put grated cheese on last layer.
Bake at 350° for 40 minutes or until done.
