Mexican Cornbread is an moderately easy dinner. Made with 1 can white corn, drained, 2 c. meal, 2 tbsp. flour, 2 c. buttermilk and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

👨🍳 Instructions
Mix meal, flour and cheese.
In separate bowl, mix eggs, corn, onion, oil and peppers.
Combine all ingredients and add buttermilk.
Bake at 450°.
Makes 18 muffins.
