Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 2 eggs, slightly beaten, 1 (no. 2) can cream-style corn, 1/3 c. cooking oil, 1 c. buttermilk and 1 c. corn meal, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mix slightly beaten eggs, corn, cooking oil and buttermilk. Sift together corn meal, salt and baking powder.
Add to egg mixture.
Pour half the batter into greased baking dish.
Put layer of cut up hot chilies, then layer of cheese over batter.
Add remaining batter.
Cheese may be sprinkled over top.
Bake 25 minutes in 450Β° oven.
Yields 10 to 12 servings.
