Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 c. plus 2 tbsp. meal, 1/2 tsp. salt, 1/2 tsp. soda, 2 eggs and 1 c. milk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine 1 cup meal, salt and soda; mix in bowl.
Add eggs, milk, corn and bacon grease.
Stir until smooth; set aside. Saute beef and sausage; drain.
Sprinkle 1 tablespoon cornmeal in greased skillet and heat.
Pour half of batter in the skillet; sprinkle with cheese, ground beef, sausage and onion, then pepper. Pour remaining batter over mixture.
Bake at 350° for 45 to 50 minutes. Let stand in skillet about 10 minutes.
