Mexican Cornbread
Mexican Cornbread is an easy dinner. Made with 1 c. cornmeal, 2 eggs, 1 small can mexicorn, 1 medium onion, grated and 1/2 lb. cheese, grated, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix all ingredients except cheese.
Pour 1/2 mixture into prepared skillet.
Spread cheese over this.
Add remaining mixture over cheese.
Bake as you would cornbread.
If you would like cornbread to be hot, add 1 to 2 pods of hot pepper.
