Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 2 eggs, 1 c. sweet milk, 1 c. corn meal, 1 can creamed corn and 1/4 c. oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Brown ground beef and onions, drain.
Mix in chile peppers. Mix corn meal, milk, eggs, creamed corn and oil.
Pour 1/2 of batter in 9 x 13-inch pan.
Place meat, onions and pepper on top of batter.
Sprinkle with cheese.
Pour remaining batter in.
Bake 50 minutes to 1 hour at 350°.
(Reduce heat to 300° for electric oven and check at 45 minutes.)
