Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 2 c. corn meal, 3/4 c. sour milk, 1/2 onion, chopped, 1 tbsp. sugar and 1 or 2 large hot peppers, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Meal and sugar in large mixing bowl. Combine eggs and milk in a separate bowl. Make a well in center of dry ingredients.
Add liquid ingredients all at once; stir until smooth, then add cheese, hot pepper, corn, bell pepper and onion.
Oil; stir that together. Pour into an iron skillet and bake at 425Β° for 20 to 25 minutes, until golden brown.
Cut; serve immediately.
