Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 1/2 c. yellow corn meal, 1 tsp. salt, 3 eggs, beaten, 1 can small ortega chili peppers and 1/2 c. chopped onions, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix all ingredients except onions and cheese, and pour half of batter in 12-inch iron skillet.
Sprinkle half of cheese and all chopped onion over batter.
Then pour rest of batter over onion and cheese.
Sprinkle remaining cheese over top.
Bake at 400Β° until well done, approximately 25 minutes.
