Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 1 (3 to 4 lb.) chicken, 1 onion, chopped, 1 (1 lb.) box velveeta cheese, 1 pkg. nacho flavored doritos and 1 can cream of chicken soup (undiluted), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil chicken; debone it and place in bottom of large casserole dish. Put chopped onion on top of chicken, then sliced cheese over onion. Put broken Doritos over cheese.
Put soups and Ro-Tel tomatoes in blender; mix well. Pour over top of casserole. Bake at 300Β° for 1 hour. Good with Mexican Salad.
