Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 2 large fryers, 1 large onion, 1/2 lb. velveeta cheese, 1 medium pkg. doritos and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil fryers; debone.
Spray large oblong casserole dish with Pam.
Place chicken in dish.
Sprinkle with garlic salt and cayenne pepper.
Dice onion; sprinkle over meat.
Add shredded Velveeta on top.
Crush half of the chips; put over cheese.
In blender, blend mushroom soup, chicken soup and Ro-Tel.
Pour over other ingredients; top with remaining chips which have been crushed.
